Now, as Four Seasons, this iconic hotel begins a new era, delivering the highest standards of personalized service.The Role of Chef de PartieReporting to the Sous Chef, you will be responsible for coordinating daily tasks at your cooking station. You will oversee the preparation of food items for guest orders, ensuring consistent quality is delivered in every dish, following recipe cards as well as production, portion and presentation standards. You will be completing mise en place and setting up cooking stations for service, always maintaining a safe and sanitary work environment as per HACCP, dating food containers while ensuring all perishables are kept at proper temperatures. You will help check pars and assist in setting up plans and actions to control food waste, developing and mentoring the Commis de Partie while ensuring all guests receive the highest levels of food excellence consistently.Our Ideal Chef de Partie,Fine Dining candidate will haveHigh school diploma, cooking school or culinary insistute education or equivalent experience.At least three years of culinary experience or related work experience in luxury hotels and/or stand alone fine dining restaurants or restaurant groups. International experience would represent an asset. Advanced culinary knowledge is expected for this position. Previous supervisory experience is preferred. Working knowledge is generally learned on the-job.You should have good knowledge of Italian and international dishes, food items and recipe preparation, along with the ability to multi-task and with excellent organizational skills. You should be a team player who brings a personal touch and energy to our guest experiences. Ability to operate, maintain and properly clean deep fryer, boiler, stove, steamer food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, flat top grill. Proficient knife skills and ability to multi-task. The knowledge of English would represent an advantage.This position is based at the San Domenico Palace Taormina and the contract is seasonal. The candidate must have a flexible schedule with the ability to work all shifts, weekends and holidays. You must possess the legal right to work in Italy.
